Due to its long preparation time, Bolognese sauce is often made for several people or meals, and our recipe is for 4 people. Add half a kg of onion, 2 carrots and 2 cloves of garlic to the olive oil. Sauté until the onion softens and add 2 bay leaves for a better aroma and taste of the sauce and parsley. Add 1 kg of pure ground beef to the pot and fry it well, stirring constantly to break up the meat. When the meat is golden brown, add 1 dl of homemade salsa and 1 dl of white wine. Season to taste, and when the alcohol has evaporated, add the pancetta cut into pieces. Reduce the heat and cook for about 2 hours, stirring occasionally, and adding stock if necessary. Cook the mafalda and mix with the finished sauce.

Serve and sprinkle with flakes of Pag cheese.
