Brusa artisan Panettone is handmade with 5 fermentation processes, and is characterized by the use of ancient natural yeast - LEVITO MADRE.  Unlike brewer's yeast, fermentation with natural yeast is much slower and requires much more complex processing. Natural yeast or natural starter gives it an intense aroma, which gives it a special taste and smell.
