Traditional pasutice, or as the rest of Croatia calls them krpice, are at the very top of traditional Istrian cuisine, made from the highest quality durum wheat grain and fresh pasteurized eggs. The rolling process and particularly long drying are indispensable elements of the Istrian cuisine experience. Due to their specific texture, they go well with various sauces, and in Istria they are traditionally eaten for Christmas Eve and Easter.
