Tagliatelle with cuttlefish ink in a homemade sauce with monkfish cutlets

– homemade tomato sauce (salsa)
– anchovies
– capers
– black olives
– olive oil
– garlic
– parsley
– monkfish cutlets
– rosemary
– cuttlefish tagliatelle

Mix flavored garlic and parsley in olive oil in the finished homemade salsa. Add anchovies, capers and olives and cook briefly. Season as desired. Fillet the monkfish and fry smaller pieces on a grill pan with a little olive oil. For aromatization and better taste, add some rosemary to the monkfish in the pan. Mix the cooked tagliatelle with the prepared sauce and serve together with the monkfish fillets.
