INGREDIENTS

– oilive oil
– onion
– carrot
– garlic
– bay leaf
– parsley
– beef
– homemade salsa
– white wine
– pepper
– pancetta
– mafalde
– Pag cheese

PROCESS

Due to its long preparation, bolognese sauce is often made for several people or meals, and our recipe is for 4 people. Add half a kg of onions, 2 carrots and 2 cloves of garlic to the olive oil. Stew until the onion softens and add 2 bay leaves for a better aroma and taste of the sauce and parsley. Add 1 kg of beef mince to the pot and fry it well, stirring constantly to finely chop the meat. When the meat turns golden, add 1 dl of homemade salsa and 1 dl of white wine. Season as desired, and when the alcohol evaporates, add the pancetta cut into pieces. Reduce the heat and cook for approximately 2 hours, stirring occasionally, and pour stock if necessary. Cook the mafalda and mix it with the prepared sauce. Serve and sprinkle with slices of Pag cheese.

TRICK

Add a little milk to the sauce to neutralize the acid.
