Homemade Istrian fuži, wild asparagus, sun-dried tomatoes, crispy pancetta & pickled onions

INGREDIENTS

– asparagus
– fresh pancetta
– dried tomatoes
– garlic
– parsley
– pickled shallots
– white wine
– vegetable stock
– spices as desired
– butter

PROCESS

Blanch the asparagus in boiling water. Cut fresh pancetta into cubes and caramelize in a pan. Then add dried tomatoes, garlic, parsley and pickled shallots. Pour in white wine and cook until the wine evaporates. After the wine evaporates, boil for a few more minutes. If you don’t have a stock, you can use starch water or water from boiled asparagus. Season the sauce as desired and add asparagus. Mix the cooked pasta with the sauce, and at the very end, if desired, add butter to combine all the flavors.
